Mandarin & Date Vegan Protein Bars (draft #1)

Ok, so I'm calling this a draft version because I am still working on this recipe as time goes on but I think it's ready for some crash testing if anyone wants to give it a go :P Please let me know how it goes!

The Ingredients

1 small banana

1/2 cup coconut flour

1/2 cup flaxmeal

1/4 cup organic coconut sugar (regular sugar or sweeteners like agave could be used but you may need to adjust quantity)

1/2 cup Vanilla protein powder

1/2 cup oat milk (you could also use other milks like almond etc)

2 small mandarins (you could also use other fruits like berries)

1/4 cup sliced almonds (you could also use chia, sunflower seeds or other nuts)

8 roughly chopped dates

The Making Part

Combine the banana, coconut flour, flaxmeal, coconut sugar, protein powder  and mandarins in a food processor and waz up until a dough is formed (you could also do this old school with a bowl and spoon if you don't have a food processor).

Take out the dough and work in almonds.

Spread dough out on a sheet of baking paper, on a baking tray and flatten it into a rectangle. Don't be too worried if your rectangle is a bit lop sided and rustic looking it'll still taste great :P I then run a knife gently through and create 12 portions before I cook it. This makes it easier to break up once it is cooked ;) 

Pop the chopped dates into the top of the bars and then bake at 200 degrees for 10 minutes.

Let them cool and then break into bars along lines. 

I like to heat mine back up when I eat it by microwaving my bar on a plate for about 15 seconds. So warm and yummy!! Nom!!!
