Avocado Triple Layer Dip - Made With KindaBacon!

The other night I had a hankering for a quick, party style food and this definitely hit the spot!
This is one of those treats that tastes really naughty but is actually loads of nice. It's made from beautiful ingredients that pop with flavour, and best of all it is super, duper easy!! My secret ingredient is Kindabacon in this recipe. This is a vegan 'bacon' made from coconut, available in Australia (it's made from organic coconut flakes, tamari, Liquid Smoke from Hickory, salt, pepper and spices. It's also gluten-free). Kindabacon is kind of like bacon flakes so they work REALLY well on a baked potato, salad and pasta! If you are overseas try to find the product 'Liquid Smoke' for this recipe and add a few drops instead.
Avocado Layer
Ingredients
1/4 Cup Kindabacon (this is a vegan 'bacon' made from coconut available in Australia. If you are overseas try to find the product 'Liquid Smoke' and add a few drops)
1/2 cup of cashews (soak ahead of time for at least a couple of hours but ideally overnight)
1/2 Avocado (I had a beautiful organic one which was amazeballs!)
Juice from 1/2 a small lemon (or 1/4 of a larger one)
Pinch of salt
1 Tbsp Olive Oil
1 Pinch Basil
Waz up all of these ingredients in a blender and hey ho, your avocado layer is done!
Scrape it into your dip bowl and then don't bother washing out the blender. Just pop in...
Tomato Layer
Ingredients
5 Fresh Baby Tomatoes (I used lovely yellows and reds which gave it the fantastic colour). Waz them up in the blender and that's it!
*You could also add some other spices in here if you like, or a pop of onion or garlic.
Pour the tomato mix over the avocado dip in the dish.
The Final Layer is my 'Better Than Parmesan' recipe I also used for my fish pie. I always have some of this on standby in the fridge because it lasts for ages!
'Better Than Parmesan' Layer
This is SO EASY!
Ingredients
1/2 cup raw cashews (dry not soaked)
2 tbsp nutritional yeast - You can buy this from the health food store
1/2 to 1 tsp salt (taste it as you go to get it as salty as you like)
In a blender waz it all up until it forms a powder. THAT'S IT!!!!
Sprinkle on top of you other dip layers and nom it all up!!!
A healthy, vegan & gluten-free friendly party food that's bound to please!
