This one is super duper easy! Veg is eggplant, white zucchini, purple carrot & red onion fried with a few drops of liquid smoke, 1 tsp garlic and herbs (I used Thyme, Sage & Chives).
Next add about 1/2 cup of oat milk (or whatever milk you use), 1/4 cup water, 1 tsp salt and 1/4 cup vegan parmesan (recipe is here but in this version I also added some turmeric when I wazzed it up originally).
I used Slendier Slim organic fettuccine instead of regular pasta because it's low carb ;) Then dressed it with more of the Turmeric Vegan Parmesan, some fresh herbs and Kinda Bacon nom, nom, nom! :P
